Pumpkin Cheesecake Squares with Gingersnap Crust

Pumpkin Cheesecake Squares with Gingersnap Crust

Makes 24 squares prep time: 15 minutesbake time: 35 - 40 minutes

Ingredients:
cooking spray
2 cups finely crushed Ginger Snap cookies
¼ cup unsalted butter, melted
3 (8oz) packages of cream cheese, at room temperature
¾ cup sugar
1 can solid pack pumpkin puree
3 tablespoons all-purpose flour
1 teaspoon pumpkin pie spice
2 large eggs, beaten

Preparation:
1. Preheat oven to 325 degrees. Spray a 13x9-inch baking pan with cooking spray.
2. In a medium bowl, combine gingersnap crumbs, and melted butter. Mix until crumbs resemble slightly wet sand. Press mixture into prepared pan. Place pan into refrigerator until filling is ready.
3. Place cream cheese, sugar, pumpkin, flour, pumpkin pie spice, and eggs into the bowl of a stand mixer. Beat until well incorporated.
4. Remove crust from the refrigerator. Pour pumpkin cheese mixture over prepared crust.
5. Bake for 35 - 35 minutes.
6. Allow squares to cool completely on wire rack. Refrigerate for at least 6 hours, or overnight. Cut into squares and serve.

AmazingMoms Tip
Use the base of a dry measuring cup to help you flatten crumbs into pan. This method helps keep your hands clean and creates a flatter, more even crust.
Stock up on extra cans of pumpkin puree when they are available. They keep well in your pantry and can be used for everything from desserts to pancakes. Take it from me, they aren’t so easy to find once the holidays are over and one never knows when a Pumpkin Cheesecake craving will strike!

Burlap..my favorite fabric..

Hello! As I still have no communication between Mr. Computer and Miss Camera, I have looked around in my favorite pictures and I have found some favorites that I keep for ideas..while I am afraid I don't know the places I found these(I apologize..I usually get the site.. but can't find them..I would love to give credit where its due!) Burlap is one of the absolute favorites of mine to work with and using it around your home can really add a texture that is quite pleasing...I love the way it is draped above for a outdoor room.. and what a great way to drape it on your porch! (below) Romantic don't ya think? The fall is a great time to use it.. it holds up well in the weather and because its so rugged you can shape it and mold it around things like posts and so I will be using it at the harvest party this year...so excited for that..I really hope I can get my camera to work..I wont be able to buy a new one right now..it hurts to say that! But, I know it will work out somehow..I had such big plans such as taking classes but I guess it will have to wait..
..I hope your September is getting you excited for baking and crafting! And that your doing lots of it! Thanks for stopping by! Love ya! mean it! Stephanie

P.S. Mr. Computer and Miss Camera are still fighting..its like Gone with the Wind over here...drama ,drama, drama!

Saturday, September 4, 2010

Hello there! I'm stopping in myself to let you know that Mr.Computer and Miss Camera are in a spat...I'm trying to work with them..but really ...they are being unreasonable (between you and me)...Miss Camera is being a little shall we say...temperamental? She refuses to upload photos to share with all of you..Mr.Computer isn't even acknowledging her and I am at my wits end with these two...it may not be all their fault I admit..I have my hands in this a little.. if I'm being honest..but what am I to do? I have such limited knowledge about what Mr.Computer wants of me..I learn more about him everyday but still, I feel like he doesn't really get me..ya know? Miss Camera may be in need of a little TLC..she has been dropped on her head so many times there is a crack in her window..poor thing..if only she would listen to me when I scream at her about her lack of battery power and her oh so slow functions..I whisper sweet nothings in her ear to make her work but alas..she is so stubborn...only when SHE is ready can we can anything done...I am not even kidding her..I'm trading her up if she doesn't knock this stuff off....Mr. Computer is grinning..hehheee... me too.....I hope to get them speaking to each other soon..in the mean time, I will have to do some posts on other things..yes, Miss Camera... that is a threat...hmmmm. Thanks for stopping by! Love ya mean it Stephanie
